Full Version: My Ultimate Chicken Soup recipe!

Mom was right!

THIS soup will cure all ills and tastes amazing, and yummy, and delicious and filling!

AND ... this is INSANELY easy to make!

Here's what you'll need:

Ingredients

1 whole uncooked chicken ~ about 3 lbs or 1.5 kg
4 stalks of celery – cut in half – side ways not length
4 Carrots – cut in half – side ways not length
1 large onion – cut in half or 3 pieces
2 bay leaves
2 or 3 cloves of fresh press garlic .. love garlic! add more!
Kosher salt ~ about 1 to 3 tablespoons or to taste
Black Pepper to taste ~ about 1/8 to ¾ tablespoon or to taste

Direction

1. Put the chicken, garlic, celery, carrots and onion in a large pot and cover with cold water. If you are using a new stalk of celery, add the flowery tops of the celery as well as the 4 stalks into the pot.
2. Bring to boil in high heat then reduced down to a simmer for about 60 to 90 minutes or until the chicken meat falls off the bones – you can skim off the fat-foam a couple of times while cooking.
3. Removes the flowery stalks of celery and bay leaves and throw them out.
4. Remove celery stalks, carrots and onion and put them aside.
5. Take the chicken out of the pot and remove all meat without the skin from the chicken and put aside.
6. Strain the broth. Here's a cool tip: you can use all of the broth or use enough to make this soup more like a stew .. keep the rest for another recipe .. I like my chicken soup thick with chicken and vegetables .. soo .. I only use about 2/3 of it .. Smile
7. Chop your vegetable in small to medium size and add to the broth.
8. Add meat to the broth.
9. Season with salt and pepper, taste and adjust
10. OPTIONAL: at this point you can add about 1cup of egg noodles and let it cook and simmer for another 20 minutes.
11. Otherwise, stir well all ingredients and serve!


Makes about 2 or 3 litres of amazing Chicken soup!
