Full Version: My Ultimate Pancake recipe!

This is my ultimate pancake recipe!

PERFECT for those dark days of fall when you want to start the day of with a perfect carb meal that will make you happy, glowing, lazy, satisfied and in need of some much need comfort!

I make this ALL the time for my guests! and it IS decadent!

AND it is soooo easy! I am lazy you know .. I like food preparation to be .. well .. easy and fast and totally satisfying!

This is it!

Here's what you'll need! THE Ingredients:

 Flour
 Salt and sugar
 Magic© baking powder
 Milk, eggs, butter
 Crisco shortening
 Topping like fruit or anything you want to serve them with!


Blend really well or sift if you have a sifter - before measuring:

1st - The dry stuff

1 ½ cup of flour
½ - 1 teaspoon of salt
3 tablespoon of sugar
1 ¾ or 2 teaspoon of Magic© baking powder

2nd - The wet stuff:

Combine the following separately:

1 or 1 ¼ cup of whole milk
1 or 2 eggs
3 tablespoon of melted butter – microwave butter for about 10 – 15 seconds or until melted

 Pour the wet stuff quickly into the dry stuff – mix together with fork until all is wet – about 15 seconds – don’t worry about lumps! You have soooo many things you need to worry about life and frankly do you really want to prepare the ultimate breakfast with anguish about things like lumps .. of course not! ..
 Using a Teflon pan if you have one!
 Use mark 5 – 6 on stove top element with Crisco shortening in the pan, wait until it has melted. High heat will burn the pancakes - keep it low! Mark 5 is good! Much in life is best done slowly ..
 To test your pan – drop a couple of drops of water on hot pan – drops of water will bounce and sputters on hot pan– then your pan is ready!

 Pour the batter in with a soup ladle and it’s ready to turn when you see small bubbles on top with the edges slightly firm! Now I am ALL about experimenting .. but I find that pancakes the size of ... say .. a DVD .. is simply perfect! .. this way you can stack them on a plate and your guests will feel gratified by the modest size and feel like they aren't over doing it .. and yet reap the benefits of its deliciousness! 3 or 4 DVD size pancakes on a plate is a truly comforting and nurturing dish!

 TIP: you can add anything in the batter like fruit, or chocolate chips, etc. When I make this for friends who come over with kids .. I sometimes use things like chocolate chips or butterscotch chips .. but for my adult friends .. I often throw in fresh ripe blueberries .. you really can't beat that! .. the blueberries explode as they cook and fill your taste buds with a strong, sweet, and totally delicious fragrant taste! Because I am a purist .. Smile .. I like to make them plain and then ADD fruits between the layers of pancakes!

Serves 2 or 3 or 4 hot pancakes with your favorite fruit - I am partial to blueberries or strawberries or bananas - between them with strips of butter between the layers and on top and covered lavishly and generously with real maple syrup - but please don't use that sweet store bought syrup .. its benefits no one Smile !

You can add slightly crushed walnuts or cashews to give it a tender slightly salty crunch to this rewarding culinary experience!

Feeling fancy? Gently powder with powdered sugar and a rumor .. LOL .. of cinnamon or nutmeg ..

And of course .. you serve this with bacon or your favorite sausages .. and adorn the plate with a slice of smoked gouda cheese.

And peace will reign in your heart as well as your guests!
