As the cold weather sets in, with it naturally follows thoughts of cold weather comfort food!
I love meatloaf. You can almost never go wrong unless you start out with too dry a mix. Other then that, its virtually fail safe food.
But it gets boring - so tonight we try something new!
I did my meat mix with garlic, onion, tomato, spices, etc - but then I found in the freezer some left over shell stuffing that I had on hand - (ricotta, Italian sausage, spices) - so I used that as a wettner - added breadcrumbs and mixed.
Then I decided to play - so it got laid out about 3/4 inch thin on waxed paper - I added a layer of sliced ham, and then a layer of Provolone. Rolled it up in a log, and it's in the oven now!
I'll let you know the results
