Honestly, Filipinos adore bread more than they admit. Bread is usually present in Filipino Food options. Each time the price of sugar or flour increases; individuals are worried that the taste or size of their dependable bread products will be affected. The number of bread products in almost any Filipino bakery- pan de sal, monay, putok, Spanish bread and kabayan - are testaments on the Pinoy’s passion for bread.
“You could be surprised at how good bread baked with assorted fruits, nuts, seed products, cheese, and even spices, can taste,” explains Rabat. This is also true for artisan breads that are handcrafted with special focus on quality of compounds and baking techniques. Unique breads require certain cooking strategies and tools, all in pursuit to create breads that gratify any food pairing.
Rabat, an expert of the corporate world, started baking bread with “Bun Express”, a hamburger and hotdog cart business, which required they prepare their own buns. In 2005, their bread manufacturing extended to a line of Italian breads supplied exclusively to Italian establishments. Rabat’s adoration for creating breads exclusively customized for the client’s requirements blossomed, “We accommodate the chef's imagination. It is satisfying to come up with unique breads exclusive to their demands. It is by itself a creative process.”
As with every true passions, Rabat views it challenging to craft more and more bread varieties aside from her best-sellers of apple-cinnamon rolls, garlic bread, dulce de leche rolls, raisin and walnut wheat batard, as well as braided brioche. “I find myself wandering towards bread shops. (When) friends and family come back from recent journeys and rave about their latest bread finds, I ask them to describe the taste, color, texture, shape and visuals of breads they're longing for. Coming up with my variation is personally gratifying.”
